1 1/2 t. olive oil
1 garlic clove, mince
1/2 shallot, munced
1/2 bunch pencil-thin asparagus
1/2 C vodka
1 pint heavy cream
1 lemon, zested
1 lb. rigatoni pasta, cooked to al dente and drained
4 oz. can crushed tomatoes
12 oz. smoked salmon
Kosher salt and pepper, to taste
2. Add the asparagus. Deglaze the pan with the vodka and reduce by 1/2.
3. Add the cream and lemon zest. Simmer for 3 minutes.
4. Add the cooked pasta to the pan. Stir in the tomatoes and salmon. Cook until heated throughout, about 2 minutes.
5. Season with salt and pepper.
