Low Carb Sandwich Bread

Introduction

I have to say i didn't think this recipe would work..but it did and it surpassed anything i could have expected! I have to say i didn't think this recipe would work..but it did and it surpassed anything i could have expected!
Number of Servings: 20

Ingredients

    1 Cup Natural Peanut Butter (smooth)
    3 large eggs
    1 tbsp vinegar (i used cider vinegar)
    1/2 tsp baking soda
    Optional 1 no calorie sweetener packet (I used a teaspoon of Splenda)

    mix the eggs and PB till well mixed then add vinegar and baking soda (will fizz)
    If you use a larger loaf pan your bread will end up very short. I used a medium sized one and the slices are about half the size you would expect from a normal slice of bread.

Tips

I cut 20 slices out of mine...they are thin, but VERY tasty. Makes a great sandwich or side with soup.


Directions

Bake at 350F for 30-40 minutes. Mine was done at 35mins. Let it cool COMPLETELY before attempting to remove from pan or slicing.

Serving Size: Makes 15-20 servings. highly depends on size of pan.
