Introduction

This is delicious served with egg noodles, but to make it a bit more diet friendly I serve it with brown rice. It will be lower in fat by using the low fat soup. I just didn't have any available. This is delicious served with egg noodles, but to make it a bit more diet friendly I serve it with brown rice. It will be lower in fat by using the low fat soup. I just didn't have any available.
Number of Servings: 6

Ingredients

    1.5 lb. pkg. of lean beef stew meat
    1/2 yellow onion chopped
    2 T olive oil
    2 cans of Cream of Mushroom soup
    1 16 oz container of light Sour Cream

Tips

Instead of stew meat, you can use lean ground beef or ground turkey. You may want to season your meat with some garlic powder or Mrs. Dash. You could also try Emeril's Essence or Paula Deen's House Seasoning.


Directions

Begin by saute'ing 1/2 chopped onion in olive oil in deep skillet. Add small bite size pieces of stew meat and brown until cooked the way you like it. Add two cans of cream of mushroom soup and 12-16 oz. of light sour cream.

Serving Size: Makes 6 - servings - 4 oz. meat
