Vegan "Meat" Balls

Introduction

Number of Servings: 36

Ingredients

    1 pkg water packed Extra Firm Lite Tofu
    1 1/3c whole wheat bread crumbs
    1 cup quick cooking oatmeal
    1 cup finely ground walnuts
    2 tbsp braggs liquid aminos
    1/2 c minced onion
    3/4 tsp salt
    1/2 tsp garlic powder
    1 tsp onion powder
    1 tsp dried parsley
    1 tbsp nutritional yeast
    1/4 tsp dried basil
    1/4 tsp dried thyme
    1/4 tsp dried sage
    1/4 tsp italian seasoning
    1/4 c water
    1/2 cup wheat gluten

Tips

The nutritionals are calculated for 1 ball = 1 serving, for calorie counting purposes, so be sure to take that into account. Usually I eat three balls on a sandwich.


Directions

Just mix everything well, form into balls, and bake in a 350 degree oven for 25-30 minutes. Eat as is, smash some in a hamburger bun, add sauce for a meatball sub, or crumble into any recipe that calls for vegetarian meat crumbles. These are pretty tasty, even the kids like them.
