Tuna with capsi-corn salsa

Introduction

You can use tuna instead of salmon You can use tuna instead of salmon

Ingredients

    95g can Tuna in springwater, drained
    3 Tbs low fat cream cheese
    1 green shallots, or 1 Tbs chives finely sliced
    1/4 cup corn kernels, canned well drained
    1/4 red capsicum, de-seeded and finely chopped
    6 Arnott's Vita-Weat crackers

Directions

Combine tuna , light cream cheese and green shallot, ends trimmed, thinly sliced, in a medium bowl. Set aside
Combine can corn kernels, red capsicum, in a separate bowl.
Spread the cream cheese mixture evenly over 6 Arnott's Vita-Weat crackers. Top with the corn salsa and serve
