Lentil Soup

Introduction

I use brown lentils but I want to try red lentils next time. I use brown lentils but I want to try red lentils next time.
Number of Servings: 4

Ingredients

    Olive Oil, 2 TBS
    Carrots, raw, 1.3 cup, diced
    Onions, raw, 1 cup, chopped
    Tomato Paste, 2 TBS
    Ground Cumin 3/4 tsp
    Lentils, 3/4 cup
    *Brown Rice, medium grain, 3 TBS
    Water, tap, 6 cup (8 fl oz)
    Herb ox Sodium Free Instant Broth and Seasoning, 2 envelopes
    Pepper, black, 1/4 tsp

Tips

Serve with salad and cornbread.


Directions

Heat oil in large pot over medium heat. Add carrots and onions; cook, stirring occasionally, until onion is softened, about 7 minutes. Add tomato paste and cumin; stir to combine. Add lentils, rice water, bouillon, and pepper; stir to combine. Bring to a boil. reduce heat and simmer 25 minutes or until rice and lentils are tender. Makes about 6 cups. Serves 2.
