1/2cup-Dry white wine
1/2cup-Low sodium chicken broth
4tbsp- butter (can be unsalted)
1-2tsp-sage,pepper, and cayenne (pepper can be white)
Add: wine, cream, broth, and lemon juice. Simmer until reduced by half, 8-10 minutes.
Wisk in: buter, 1tbsp at a time, stirring canstantly. Do not add more butter until previous addition has melted completely.
Finish: sauce with sage and seasonings. Keep in a warm water bath until ready to serve.
Serving Size: Makes about 1 cup
