Jim's Vegetable soup

Introduction

very plain soup, good flavor but no added broth or salt, good for vegetarian and high blood pressure type folks! very plain soup, good flavor but no added broth or salt, good for vegetarian and high blood pressure type folks!
Number of Servings: 24

Ingredients

    can of black eye peas
    can of diced tomatoes
    can of tomatoes in sauce
    1 large onion
    8 small carrots
    1/3 head small cabbage
    1 russet potato
    1/2 cup rice
    1 bag mixed veggies
    1 bag broccoli cuts
    2 small yellow squash
    1 med zuccini
    2 med green bell peppers
    1 large red bell pepper

Directions

Dice all the vegetables, add everything into the pot and cook it until everything is tender. its much more flavorful when the ingredients have had time to meld, I let it sit overnight on low.

Serving Size: makes 24 1 cup servings
