Potato and leek soup

Introduction

Just a converted version of another recipe using things i had knocking around in the cupboard. Just a converted version of another recipe using things i had knocking around in the cupboard.
Number of Servings: 6

Ingredients

    1 Large Carrot
    4 Small Potatoes
    1 Leek
    1 Pint Chicken Stock - Low sodium
    Half a Large Onion
    3 Cloves of Garlic
    Pinch of Fennel
    1 tbsp Olive oil
    Salt and pepper to taste

Tips

If potato begins to stick to the bottom of the pan add a little water to moisten the pan.


Directions

Heat oil in a pan
Finely chop Carrots, Onion, Garlic, Potato and leek, add to pan
Leave to soften stirring occasionaly
When soft add stock and Fennel
Leave to simmer for 20 minutes
Add salt and Pepper to Taste


Serving Size: Makes 6 Cup Portions
