Lasagna Rolls

Introduction

This is an easy recipe for lasagna rolls that gives you that indulgent feel, without the indulgent calories. I like it with a simple caprese salad (slice about 1 medium tomato per person, and drizzle with a little olive oil,fat free mozzarella and slivers of fresh basil) you could also use a lettuce based salad with some fat free Italian dressing. Ingredients

    12 lasagna noodles
    12 oz turkey sausage (3/4 pound)
    1 pkg (10 oz) frozen spinach
    1 c part skim ricotta cheese
    1 c fat free shredded mozzarella
    2 cups marinara sauce
    1 tsp red pepper flakes
    a pinch of nutmeg
    1 tsp olive oil
    salt and pepper to taste


Tips

A good idea is to boil a couple of additional lasagna noodles in case any get broken in the process.


Directions

Cook lasagna noodles according to package directions, less 1 minute to make al dente. Drain and mix with olive oil so noodles don't stick together. While pasta is cooking, brown turkey sausage in skillet. After its browned, mix in thawed spinach, red pepper flakes, nutmeg, and salt and pepper to taste. Continue cooking on low to medium heat until spinach is warm. Preheat oven to 400 degrees. Combine sausage mixture with ricotta in large mixing bowl. Spread about 1/2 cup of the marinara sauce in the bottom of a 9x13 baking dish. Cut lasagna noodles in half on a cutting board, and at one end of the noodle put one large spoonful of the sausage/cheese mixture (approximately 1 1/2 tablespoons) then roll it up, placing it in the baking dish. Repeat, until you've used all the noodles and filling. Cover the rolls with the remaining marinara sauce (about 1 1/2 cups) and sprinkle the mozzarella on top. Cover the dish with aluminum foil and bake about 20 minutes. Uncover, and bake about an additional 15 minutes, until the cheese is melted.
