Potato Soup

Introduction

This is my version of a recipe taught to me by my ex-mother-in-law This is my version of a recipe taught to me by my ex-mother-in-law
Number of Servings: 12

Ingredients

    6 medium Russet Potatoes
    6 large red potatoes
    1 medium onion
    1 1/2 c diced ham
    1 c 2% milk
    salt or celery salt to taste

Tips

My mother in law used to make this with bacon, and she also added a dollop of sour cream when she dished it up. I have also thickened this soup using about half a cup of dried potato flakes.


Directions

Peel russets and dice large. Dice red potatoes about the same size (not necessary to peel these unless you really want to). Grate onion and add to pot. Cover with cold water and cook until the potatoes are done. Add diced ham and butter, add milk when butter is melted. Season to taste with salt and pepper. Thicken by removing some of the potatoes and mashing them, then return to pot.
