Ingredients

Potato, raw, 1 cup diced
Onions, raw, 0.5 cup, chopped
Carrots, raw, 0.5 cup, chopped
Butternut Squash, 2 cup, cubes
Vegetable stock cube, low sodium, 1 cube
Water, tap, 2 cups
Ginger, ground, 0.5 tsp
Nutmeg, ground, 0.5 tsp
Coriander, ground, 0.5 tsp
Lemon Juice, 1 lemon
Pepper, black, to taste
Directions
Put all the ingredients except the lemon juice and pepper in a saucepan, bring to the boil and simmer until vegetables are soft. Liquidise and add the lemon juice and pepper to taste.
