Ingredients

    *Del Monte Petite Cut Diced Tomatoes, 5 cup
    Water, tap, 1.5 cup (8 fl oz)
    Sweet potato, cooked, baked in skin, without salt, 1 cup
    Yellow Sweet Corn, Canned, 1 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Beans, red kidney, 2 cup
    *Celery, fresh (2 sticks), 1 serving
    Carrots, raw, 1.5 cup, grated
    Cabbage, fresh, 4 cup, shredded
    Chili powder, 1.5 tbsp
    Garlic powder, 1 tbsp
    Pepper, black, 1.5 tbsp
    *Extra Virgin Olive Oil, .50 tbsp
    tomato paste, 6 oz

Tips

Any kind of veggies can be used in this dish. I make a big batch and keep in frig for when I'm dying of hunger.


Directions

saute onion and celery in olive oil till tender. Combine with other ingredients in crock pot. Cook on high for 3 hours to 4 hours.
