Beef, Lentil & Veggie Soup

Introduction

Easy and hearty one pot soup that is great for dinner and reheats well for lunches! Easy and hearty one pot soup that is great for dinner and reheats well for lunches!
Number of Servings: 8

Ingredients

    2 tbsp olive oil
    1 lb ground beef
    1 large white onion, chopped
    5 cloves garlic, minced
    1/2 cup carrots, sliced
    1 can petite diced tomatoes
    4 tbsp. italian seasoning
    1/2 cup lentils, rinsed
    8-10 cups beef broth or bouillon

Directions

Heat oil in large soup pot. Brown ground beef, add in onion and saute until translucent, add in garlic and saute for an additional 30 sec - 1 min. Add carrots, tomatoes, italian seasoning and broth, bring to a boil. Add lentils and simmer until lentils are tender, approximately 30-40 minutes.

Serving Size: Makes 8 servings
