When you toast sooji in ghee , heat should be medium high and stir constantly. When you add hot milk to toasted sooji be very careful , swith off the heat and keep lid in one hand then pour milk in hot sooji and cover it quickly.
Melt the ghee in a saucepan and toast the sooji until golden. In the mean time boil the milk in the microwave. When sooji is toasted add hot milk and cover the pan quickly or it will splatter on you. When boiling is settled down uncover and stir sooji it will look like porridge, stir and cover it again and cook for 2 minutes. Then add sugar, raisins and cardamom powder stir and cover and cook for another 2 minutes. Enjoy warm or at room temp.
