Introduction

Packed with fruit, fiber, and deliciousness. No added sugar, only shredded fruit and honey! Your body will love you for these. My kids gobble these up and request them at snack time. Ingredients

    3/4 cup raisins (covered with water in microwaveable dish.)

    1 1/2 cups bran cereal (such as Kellogg's All-bran Original cereal)
    1 1/4 cups whole wheat flour
    1/4 t salt
    1/4 t baking powder
    1 t baking soda
    1/2 t cinnamon

    2 T margarine, melted
    1 egg plus 1 egg yolk
    1/2 ripe banana, mashed
    2 small apples, shredded
    1/2 cup honey
    3/4 cup milk


Tips

I was scared of that extra egg yolk. It is essential for the bran muffins to hold together despite the light, fluffy nature of this recipe.


Directions

1.Microwave raisins in water on high 1-2 minutes. Set aside and allow raisins to plump.
2. Preheat oven to 350, and grease muffin tins well, or use cupcake cups.
3.Sift together dry ingredients. Put aside.
4. In another bowl combine wet ingredients and mix until eggs are well mixed.
5. Drain raisins and add to wet ingredients.
6. Combine wet and dry ingredients and mix, JUST until wet. It should be very lumpy, and maybe even have bits of unincorporated flour.
7. Distribute b/w 15-17 muffin cups and bake 350 degrees for 20 minutes.
