Introduction

I remember this dish so fondly from childhood. Let's see if I can re-create it without the original recipe--and using healthier ingredients! I remember this dish so fondly from childhood. Let's see if I can re-create it without the original recipe--and using healthier ingredients!
Number of Servings: 4

Ingredients

    1 can no salt added corn, drained & rinsed
    3/4 cup Egg Beaters
    1/2 cup white whole wheat flour
    1/4 tsp salt
    1/8 tsp pepper

    **optional: vegetable oil for frying
    **optional: 1/2 tsp sugar or splenda

Directions

In medium size bowl, combine eggs, corn, flour, salt & pepper. Stir until mixed. Spray a large nonstick skillet with Pam and bring to medium heat. Spoon corn-egg mix into pan to make 3 x 2 inch ovals (about 1/4 cup batter each). Fry only as many as will fit, without touching until golden; turn & fry on other side until center is done -- about 3 minutes on each side. Keep warm until all are fried, adding spray to skillet as needed. **note: you can also "stir-fry" and make this more like a version of scrambled eggs.

Serving Size: makes approx 4 servings of 2 "fritters" each
