Introduction

Ingredients

8 even sized button or flat mushrooms
4 Tbs low fat cream cheese
1 tsp fresh herbs of choice (basil, chives, thyme, parsley etc) very finely chopped
4 slices very lean ham separated
2 lettuce leaves and 4 cherry tomatoes halved or wedged to serve
Tips
Directions
Wipe mushrooms over with a kitchen towel (do not wash)
Carefully remove stalk from center without breaking mushroom cap.
Chop 3 slices ham finely
In a basin mix herbs, cream cheese, ham and finely chopped stalk from mushrooms
Fill center of each mushroom with cream cheese mixture
Cut strips of the other slice ham to decorate the tops of each mushroom
Serve on lettuce and garnish with tomato
Serving Size: serves 4
