-4 cups of vegetable broth
-4 cups of water
-1 cup of rinsed brown or green lentils
-1 cup of brown rice
-1 cup of Barilla Plus elbow macaroni
- salt and pepper to taste
-1 tbsp each turmeric, coriander and cumin
-1 tbsp olive oil
While the koshary cooks, saute the onion with 1 T olive oil until it's softened. Add the diced tomatoes (2 cans, with juice) and cook down until the mixture is slightly thickened.
Serve the koshary topped with the tomatoes.
Note: A serving is one cup of koshary and approximately 1/2 cup of topping.
