Introduction

Red & green spinach-tomato soup, perfect for Winter! Red & green spinach-tomato soup, perfect for Winter!
Number of Servings: 10

Ingredients

    2 tbsp olive oil
    2 oz (3 slices) bacon, finely diced
    2 cloves garlic
    1 can (49.5oz) chicken broth
    2 tsp Italian seasoning
    1 can (28oz) crushed tomatoes
    10oz fresh spinach

Directions

Heat the olive oil in a Dutch oven over medium heat. Add bacon. Cook until crisp. Add garlic; cook for 1 minute. Add broth and Italian seasoning; bring to a boil and simmer for 5 minutes.

Stir in tomatoes and simmer for 5 minutes. Add spinach; cook until wilted.

Serving Size: makes 10 1-cup servings
