Delicious Banana bread! Can substitute 3/4c applesauce and 1 1/4c mashed banana (about 3) for bananas. Also good if you substitute 1c whole wheat flour for 1c of white flour. Ingredients

2/3 c low-fat buttermilk or 2/3 c milk plus 1T vinegar
2 1/3 c flour
1 c sugar
1 1/4 t baking powder
1 1/4 t baking soda
1 t salt
2 eggs
2 c mashed bananas (apx. 5)
1 t vanilla
1/2 c sliced almonds
Tips
If you choose to make muffins, bake @ 375F 15-20 min for 12 - 15 muffins.
Directions
Mix dry ingredients in large bowl. Lightly beat eggs. Add wet ingredients and nuts to eggs in medium bowl. Add wet to dry. Stir until just mixed.
Spray loaf pans with cooking spray. Pour batter into prepared loaf pans. Fill only 3/4 full. Loaf rises very well. Bake @ 350F for 55 - 60 min. or until knife comes out mostly clean. Loaf is very moist.
Serving Size: Makes 1 9x5 loaf and a mini loaf, total 16 servings
