Ingredients

Mushrooms, fresh, 1 cup, pieces or slices
Onions, raw, 1/4 cup, chopped
*Peppers, sweet, red, fresh, 1/3 cup, chopped
Ham, extra lean, (5% fat),1/2 cup, diced
*Kraft 2% American Cheese Singles, 2 serving
Country Crock, Shedd's Spread Country Crock Light (Soft), 2 Tbsp
Egg, fresh, 5 large whisked with 2 tbsp water or skim milk.
Tips
I think the ham, cheese and margarine have enough salt so I don't add that to the mixture while cooking.
Directions
Melt margarine in medium skillet. Add chopped onion and cook just a little before adding the mushrooms, peppers and ham. Cook about 5 minutes until warmed through. Add the eggs that have been whisked. Cover with the cheese slices torn up in strips. Cook another 5 minutes stirring to "scramble" it all together. Make sure all the eggs are cooked before serving. Add any salt, pepper, or other spices you like to taste.
