Introduction

Supposedly the body does best at a slightly alkaline level. This soup is filled with ingredients which are supposed to be alkaline (to the body lemons which we know to be acidic are alkaline - same with tomatoes) Supposedly the body does best at a slightly alkaline level. Number of Servings: 8

Ingredients

    3 carrots - thinly sliced
    1/2 large onion - diced
    1 stalk celery -sliced
    1 clove garlic - minced
    1 tsp coconut oil - can subs olive oil
    1 can Del Monte Organic Diced Tomatoes (14.5 oz)
    2 cans low sodium V8 (total of 23 oz)
    2 c frozen chopped spinach
    1 cup chopped collards
    4 c water
    1/2 cup wild rice
    1.5 cup navy beans (cooked)
    1/2 tsp basil
    1/2 tsp thyme
    1/2 tsp oregano

Directions

Saute onions, carrots, celery and garlic in oil until slightly soft (about 5 min on med). Add other ingredients bring to boil. reduce heat. Simmer approx 45 min to cook rice.

Garnish with parmesan if desired (not in calorie count)

Serving Size: makes 8 servings
