Quick & Easy Chicken Broccoli Casserole

Ingredients

    3/4 c. brown rice
    2 c. broccoli, roughly chopped into 1" pieces
    1 can of Campbell's Healthy Choice condensed Cream of Mushroom soup
    1 lb. of boneless, skinless chicken tenders or chicken breast
    2 tsp. parsley
    1 tsp. thyme
    1/4 tsp. pepper
    2 oz. Grated Cheddar Cheese (optional)

Directions

Bring to a boil 1 1/2 c. water, add 3/4 c. rice, stir, reduce heat and simmer covered until tender.

Mix rice with 1 tsp. parsley, 1 tsp. thyme and 1/4 tsp. pepper.
Chop broccoli stems in 1 inch pieces and separate tops into bite-sized bunches and add to rice mixture. Stir in 1 can of condensed Campbell's Healthy Choice Cream of Mushroom soup without adding water. Spread mixture in a 9 x 11 baking pan. If desired, sprinkle with 2 oz. grated cheddar cheese. Spread chicken evenly on top and sprinkle with remaining 1 tsp. parsley. Cover with foil or lid. Bake at 350 degrees F. for 45 minutes, removing foil during the last 15 minutes of baking.

To serve, divide evenly into 4 servings.
