Introduction

Ingredients

    4 Bell Peppers
    1 1/4 lbs Jennie o 93% turkey ground
    splash of skim milk about a 1/4 cup
    2 slices of sprouted wheat bread soaked in the milk
    1yellow medium onion, finely minced
    1 or tblsp of parsley
    Pinch of salt to taste (omit if using salted seasoning mix)
    Your favorite no salt seasoning

Tips

Test a small batch of the meat to see if the flavor of the meat is what you like. Make a couple of small meatballs and fry them in a pan.


Directions

Break bread apart into small pieces and soak it in the milk in an extra large bowl. Next cut the tops off the bell peppers and clean out the insides, set aside in a lasagne pan. Pull the stems off the tops and set aside the caps to put on top of the peppers. Then finely chop the onions (wear contact lens to reduce tearing). Add the onions and meat to the bread, no need to mix it yet. Add salt chopped parsley and remaining ingredients. Add any unsalted seasoning you like, some ideas include thyme, oregano, Italian seasoning, paprika. You can experiment with smaller batches of the "meatloaf" mixture to see what you like.
Mix everything together well, use your hands for the mixing, this works the best. Stuff all the peppers and put the tops on. bake in the oven at 375 for 45mins to an hour. Contain and freeze for dinners and lunches for several weeks. Tomato sauce is not calculated in the calories.
