1 can (20 oz) Crushed Pineapple in pineapple juice
1.5 c all-purpose flour
2 EnerG Egg Replacer eggs, prepared in water
1 Tbsp Brown sugar
1 Tbsp Splenda
1 tsp cinnamon
1 tsp lemon extract
1/4 tsp salt
1/4 c dried cranberries, chopped fine
These muffins don't rise much, and are a little sticky, so make sure they are cooked through.
Mix all ingredients in a large mixing bowl.
Fill lined muffin cups with about 1/4 c of the mixture. Bake for 20-25 minutes, or until done.
Serving Size: makes 18 muffins
