Cheesy Chicken EnchiladasSubmitted by: KEMMA71
4 cups cubed cooked chicken breast
1 can (10.75 oz) Campbells* Healthy Request Cream of Chicken soup
1 (10 oz) can RoTel* diced tomatoes w/ green chilies
1 1/2 (12oz) Fat-free sour cream
2 cups Reduced-fat Cheddar/Jack shredded cheese, divided
1 can (10oz) La Victoria enchilada sauce
8 Mission* Life Balance whole wheat tortillas
Can add black olives and or green onions for some extra flavor.
2)In a large bowl, combine the sour cream, soup, tomatoes & half of the enchilada sauce. Set aside 1 1/2 cups for the topping. Add chicken and 1 cup of cheese.
3)Pour a little of the remaining enchilada sauce on a plate. Coat 1 tortilla in sauce, on both sides. Spoon about 3/4 cup of the mixture down the center of the tortilla. Roll up tightly and place seam side down in baking dish. Repeat process for other 7 tortillas.
4) Top enchiladas with remaining sauce mixture (reserved from step 2). Bake uncovered for 35 minutes.
5) Sprinkle with remaining cheese adn bake for 10-15 minutes longer or until cheese is melted.
Serving Size: Makes 8 servings, one enchilada each
