This is a meal in itself! The fat content is a little high, so you need to work it into your menu plan for the day, but the fat comes from olive oil and avocado, both of which are good for you! Ingredients

Salad Portion:
3 oranges, peeled, sliced and cut into half or quarters
2 avocados, peeled and diced
1 Tbsp. red onion, thinly sliced
Walnuts or Pecans, crushed into pieces, about 15
12 cups chopped mixed greens (to be added later)
Marinade/Dressing:
1/2 cup olive oil
1/3 cup fresh squeezed lemon juice
1/2 tsp. salt
1 tsp. each of pepper, paprika, celery seeds
Mix well, pour over the prepared orange/avocado mix. Marinate for minimum of 30 minutes. Serve over 2 cups mixed greens. Lovely to look at, delicious to eat.
Tips
Rather than add this many calories to a meal, I like to serve this salad as an entree for lunch. It's very high in potassium as a bonus!
Directions
There is no cooking, but be sure to marinate the fruit so it has a chance to absorb the flavors.
Serving Size: At least 2 cups of greens, spoon over about one-sixth of the orange/avocado mixture for each salad.
