1 c. Red onion, chopped
2 c. Fresh mushrooms, sliced
1 1/2 c. Yellow squash, chopped
2 c. Butternut squash, chopped (or zucchini)
3 c. Fresh baby spinach
10 strips bacon, cooked
Salt, pepper, garlic powder to taste
Combine all your ingredients in a large bowl & stir together. *Note: I also made this recipe where I used zucchini in place of butternut squash which was delicious, too*
Add garlic powder, salt & pepper to taste.
Grease bottom & sides of 9X13 baking dish with coconut oil and pour all ingredients from bowl into baking dish. Bake at 350 for 45 mi.
Serving Size: Makes 8 - 3" square pieces or 16 - smaller pieces to share at brunch
