Blueberry Buckwheat Pancakes

Introduction

Yummy, dense, almost vegan pancakes. Almost because they use honey. I bet you could omit it or sub agave and have a great vegan breakfast. Buckwheat has great protein and fiber, making these a healthy way to start the day. Nutritional info is PER PANCAKE, and this recipe usually makes 5 pancakes from 1/3 cup batter scoops. Ingredients

    2/3 cup Arrowhead Mills Buckwheat Pancake mix
    1/2 large banana, mashed (or 1 egg, or egg substitute)
    2 tsp canola oil
    2 tsp honey, or agave
    3/4 cup almond milk (or non-dairy milk of choice)
    1/3 cup frozen blueberries

Tips

This recipe used banana instead of egg, so it is going to be gummy compared to regular pancakes. You can also use 1 tbsp flax meal mixed with 3 tbsp water to replace egg. You could also just use egg, or any other egg substitute. Just remember, it will change the consistency.

Directions

Preheat griddle to 350, or skillet over med to med-high heat.
Mix all ingredients except blueberries just until lumps disappear.
Fold in blueberries gently.
Drop onto lightly oiled griddle or skillet in 1/3 cup scoops.
Flip when edges begin to dry and bubbles appear on suface.

Serving Size: makes 5 pancakes
