Introduction

Number of Servings: 16

Ingredients

    Dry ingredients:
    1 cup whole wheat flour
    1 cup unbleached white flour
    1 cup whole oats
    1/4 cup milled flax seed
    1/4 cup almond meal
    1/4 tsp salt
    1 tsp baking soda
    2 tsp baking powder
    2tbsp stevia
    1 tbsp cinnamon
    1 tsp vanilla

    In blender mix:
    1 egg
    1 cup water
    1 stalk celery
    1 carrot
    1 apple
    2 tbsp fresh ginger
    1 tbsp vanilla
    1/4 cup nonfat Greek yogurt
    1 large handful raw spinach


Tips

Next time I will add more fruit. The muffins were yummy but could be a bit sweeter. Also, I think I will try this again with just the whole wheat flour. I ended up having to add a bit more water to make these wet enough to scoop into the muffin tins.

Directions

mix all wet ingredients in blender and blend well. In separate bowl mix all dry ingredients. Mix just until moistened and scoop into muffin tins sprayed with no stick spray. Bake 15 minutes at 375.
