An easy way to have a healthy meal away from home. Instant brown rice, frozen veggies, meat or no meat, add some kind of spice and water, microwave at lunch.
1/2 cup of instant brown rice
1 cup or more of frozen veggies
1/3 cup of water
1 TBSP of Extra Virgin Olive Oil
left over meat of any kind or shrimp or tofu or whatever
spices ( sometimes I use a curry paste, or soy sauce and ginger/garlic, or just salt and pepper, or basil or whatever...whatever you like )
Keep in a microwaveable bowl and microwave for 3 minutes at lunch time and let sit for 1 minute after.
I usually make the night before or the morning before work and let the rice/sauce/spice sit and mix together for the morning ... heating will take longer if you make it and then cook it right away..
