Marissa's Pasta Fagioli

Introduction

Brown the sausage in a large soup pot over medium high heat, remove. Add vegetables and brown those as well, for about 10 minutes. Add sausage back in as well as broth, wine, parmesan,sauce and beans. Stir. Simmer for at least an hour when the vegetables are very tender. Keep warm until serving. Add some cooked pasta if desired after the soup is cooked. This makes it easier for portion control and the noodles won't swell or get mushy. Ingredients

    1 32 ounce box of low sodium chicken broth
    3 carrots, chopped into rounds
    2 celery stalks, chopped
    1 onion, diced
    2 uncooked turkey sausage links (I use shady brook farm)
    1 can of Cannelleni Beans (15 ounce)
    1 jar of tomato sauce (prego Light is my fave)
    1/4 cup red wine

    Pasta for serving (optional)

Tips

You can of course omit the red wine here. And as always, taste the broth to make sure its not too salty before you add the parm. Then reduce the amount slightly if it is.
