Ingredients

3 tbsp extra virgin olive oil
3 cloves crushed garlic
2 cups chopped cooking onion
2 cups chopped carrots (2 med-large carrots)
2 cups chopped celery (1 bunch)
2 tbsp dried sweet basil
8 cups chopped brocolli (2 large heads)
3 cups dried green lentils
8 cups low sodium chicken broth
Optional: 2 tbsp parmeseam cheese grated (not included in calorie count)
Tips
Directions
1. Heat olive oil in a large soup pot over medium heat.
2. Add Onions and garlic and saute for 3 mins
3. Add carrots, celery and basil and cook for a few more minutes, mix until spices coat them nicely
4. Add the rest of the ingredients and bring to a boil.
5. Reduce heat and simmer for 1 hour covered.
6. Using a wand blender puree till smooth. Garnish with green onions if desired
Serving Size: makes 14- 1cup servings
