Jenny's Spicy Lentil Veggie Soup

Introduction

I love lentil soup, but sometimes you want some extra veggies with all that protein goodness. I like to add in some heat with a little chili powder, red curry powder, and onion powder, but you can make it to suit your tastes. I like to add in some heat with a little chili powder, red curry powder, and onion powder, but you can make it to suit your tastes.
Number of Servings: 4

Ingredients

    1 can Lentil soup
    1 cup frozen squash slices (small)
    1/2 sweet potato (chopped)
    3 baby carrots (chopped)
    1 stalk celery (chopped)
    1 slice onion (chopped)
    1/4 cup Morningstar veggie crumbles
    1/4 cup whole wheat pasta (broken in half)
    1/4 cup regular pasta (broken in half)
    2 cups water
    Red Curry Powder
    Chili Powder
    Onion Powder

Directions

Cover sweet potato in saran wrap and cook in microwave until soft (4-6 minutes). Add 2 cups of water to progresso soup (in pan over medium heat). Add in frozen veggies, crumbles, and pasta. Add in chopped/fresh veggies( including sweet potato). Heat until veggies and pasta are soft. Add in red curry, onion, and chili powders to taste. Serve.
