Black Bean Salsa

Number of Servings: 8

Ingredients

    2 cans black, beans, drained
    2 green bell peppers, chopped (1 if large)
    1 medium purple onion, chopped
    1 large tomato, diced
    1/3 c. olive oil
    1 T. lime juice
    2 t. chopped parsley
    Salt and Cayenne pepper to taste

Directions

Fold together first 4 ingredients, mix last ingredients and pour over first ingredients. Best if marinated overnight. Mix occasionally. Great with Baked Tostitos Scoops.
