Simple Fresh Calabacitas

Introduction

A much simplier take on the Mexican side dish. A much simplier take on the Mexican side dish.
Number of Servings: 6

Ingredients

    1 Small onion diced
    2 cups each of sliced squash and zucchini
    1 poblano pepper, ribbed, seeded and diced
    salt to taste
    cilantro to finish

Tips

The smaller the slices of vegetables, the quicker this will cook, Watch out or they will burn.


Directions

Heat oil to medium, add onion and pepper and saute until soft. Add in vegetables and dash of salt to taste. Cover and cook until all are tender, top with Cilantro when serving.
