Clubhouse chicken

Ingredients

    Chicken Breast, no skin, 32 ounces (8-4 oz pieces)
    Olive Oil, 2 tbsp
    1 Tablespoon Italian seasoning
    Stewed Tomatoes, 2 15 oz cans
    Mushrooms, fresh, 1.5 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Green Peppers 1 cup, strips
    Cornstarch, 2 Tablespoons
    1/8 cup water

Tips

I found this did not fit in my skillet, so I had to put it in a dutch oven


Directions

In a large skillet, brown chicken on both sides in oil . Stir in the tomatoes, mushrooms, green pepper, onion and Italian seasoning. Bring to a boil. Reduce heat and simmer, covered for 10-15 minutes or until chicken juices run clear.
Remove chicken and keep warm. Combine cornstarch and water. Stir into tomato mixture and bring to a boil and cook until thickened. Serve over chicken with 1/2 cup sauce. May also serve over rice (not included in nutrition
