Bee's Fav Vegan Burritos

Introduction

Use your favorite bell peppers, I typically use red and yellow. These freeze well, I just wrap each in wax paper and toss in a freezer bag. To reheat, either wrap in foil and warm for 1hr at 350F (preferred) or microwave for 2 minutes turning halfway through. Use your favorite bell peppers, I typically use red and yellow. Ingredients

    3 cups Black Beans
    1 can Diced Tomatoes, No Salt Added
    3 cloves garlic, minces
    1/2 medium red onion
    2 bell peppers diced (your choice)
    1 tsp paprika
    1 tsp cumin
    2 cups cooked brown rice
    1/4 cup chopped fresh cilantro
    12 whole wheat tortillas
    pinch of crushed red pepper to taste
    Cooking spray
    Salt and pepper to taste

Tips

*Note: Recipe allows for 1/4 tsp salt*


Directions

1) In a food processor, process 1.5 cups of black beans and 1 can tomatoes until smooth - set aside
2) Spray a large nonstick skillet with cooking spray and warm garlic and crushed red pepper until fragrant over medium heat.
3) Add onion and saute for 3-4 minutes
4) Add peppers, paprika, cumin, salt, and pepper. Saute until veggies are tender.
5) Add tomato/bean mix and remaining beans - heat through and resalt if needed
6) Mix in brown rice and cilantro - heat until warm
7) Heat tortillas until flexible and add 1/2 cup of burrito mix to each.

Serving Size: Makes 12 burritos
