Lentil soup base

Introduction

I needed something to add to other soups to make them more fiber rich, so I came up with this base. I needed something to add to other soups to make them more fiber rich, so I came up with this base.
Number of Servings: 2

Ingredients

    Lentils, .25 cup
    V8 Vegetable Juice, Low Sodium, 4 oz
    Water, tap, .5 cup
    Garlic, .5 tsp
    *Onion powder, .5 tsp

Tips

This makes 2 (1/2 cup) servings if you choose to add it to another 1/2 cup of a simple soup for a cup of richer soup.


Directions

Place all the ingredients in a small to medium pan. Bring to a boil and then turn down to simmer until the lentils are softened.

Serving Size: This makes just a little more than a cup of rich base if you let it cook long enough for the lentils to get soft.
