Pesto Concentrate

Introduction

Most nice, thin pesto is about 1/2 oil!! This pesto concentrate paste has all the flavor, with next to no fat! Keep this in a container in the fridge and thin to your liking when needed. Ingredients


    1 clove of garlic, peeled
    1/4 cup grated/shredded Parmesan cheese
    2 tablespoons slivered/sliced almonds
    1/4 teaspoon salt
    2 teaspoons olive oil
    2 teaspoons lemon juice (sub water if you don't want it lemony)
    1/2 C firmly packed fresh herbs (basil, parsley, sage and thyme are great together, but use whatever you have in your windowsill garden)

Tips

Remember that this is a concentrate, and dilute it with any fat-free liquid before using! Even fat-free half n half for an indulgent Alfredo sauce!!

Directions

In a small food processor/chopper, add the whole clove of garlic, Parmesan cheese, almonds and salt. Process until everything is ground finely. Add oil, lemon juice and about half the herbs. Process and scrape the sides down until semi blended. Add the rest of the herbs and continue until the mixture is a thick paste.

To use:
For fish or chicken, mix 1 teaspoon of pesto concentrate with 1-2 teaspoons of water, lemon juice, chicken broth, etc to make a smoother paste. Spread on top of meat before baking.

For pasta or spaghetti squash:
Use 1 tablespoon of pesto concentrate per serving of pasta (add 3 servings to your food log) then add leftover hot pasta water and toss until thin enough.

Serving Size: Makes 12 servings, 1 concentrated teaspoon each (1/4 C total)
