400 Calorie Chicken Pot Pie

Introduction

From eating light magazine, I made 4 individual pot pies. Wonderful comfort food but under 400 cals! From eating light magazine, I made 4 individual pot pies. Wonderful comfort food but under 400 cals!
Number of Servings: 4

Ingredients

    2 chicken breasts
    2 raw carrots chopped
    2 stalks celery chopped
    1/2 medium onion chopped
    1 clove garlic chopped
    1 tbsp butter
    2 tbsp half and half
    1 cup chicken broth
    salt and pepper to taste
    1 ready made 9in pie crust
    1 tbsp flour
    1 egg for brushing top of pie

Directions

preheat oven to 400. saute carrots, onion, celery, garlic in butter, add 1 tbsp flour, whisk in cream and chicken broth, add chicken, salt and pepper, bring to boil, remove from heat. divide filing into oven safe personal size dishes. Cut pie crust into 4 parts, cover each pot with the pie crust, cut a slit in it and brush with egg. Bake about 35 min until golden brown and bubbly.
