Ingredients

    I box Couscous
    4 tbsp olive oil
    1 cup red wine vinegar
    juice from 1 lemon (1 tbsp if using lemon juice from bottle)
    1 cup cucumber
    1 cup cherry tomatoes
    1 cup scallions
    pinch of salt
    pinch of pepper


Directions

Cook couscous as directed on box
In a large mixing bowl, combine cucumbers, tomatoes, scallions, olive oil, red wine vinegar lemon juice salt and pepper

Stir in cooked Couscous

Add chopped mint and dill leaves and stir mixture.
