Spicy Ranch Crusted Chicken

Ingredients

    1 boneless/skinless chicken breast
    1 Egg white
    Dash of black pepper
    1/2 tbsp Hidden Valley Spicy Ranch dressing mix (powder)
    1/4-1/2 cup Pepperidge Farm herb seasoned bread crumbs
    1/4-1/2 cup Low Fat/Low Sodium Chicken Broth

Tips

I found that adding the chicken broth keeps the chicken moist during baking. Otherwise, you can place chicken on a greased baking sheet, and get a crispier coating!


Directions

Preheat oven to 350 degrees. Place egg white, dash of pepper, and just a dash of chicken broth in a bowl and whisk together. In a separate bowl, crush bread crumbs and add ranch mix and stir together. Dip chicken in egg white batter and then place in bowl of bread crumbs to coat. Put remaining chicken broth in the bottom of a shallow baking pan and place chicken breast in center. Cover with aluminum foil and bake for 30-35 minutes.

Serving Size: Great serving size for someone living alone!
