Elle's Roasted Vegetables

Introduction

Delicious veggies, roasted to perfection Delicious veggies, roasted to perfection
Number of Servings: 8

Ingredients

    9 medium carrots
    1 spanish onion
    1 red bell pepper
    2 large zucchini
    2 large summer squash
    24 oz baby Yukon gold potatoes
    1 tbsp Tastefully Simple Garlic-Garlic
    1/8 cup olive oil
    2 tsp balsamic vinegar
    Black pepper

Tips

Careful not to overcook, or they'll be mushy!


Directions

Cut all vegetables into rustic chunks (don't cut them too small or they could get mushy). In separate small bowl, mix olive oil, balsamic vinegar, and Garlic-Garlic. Drizzle mixture over vegetables. Mix to coat. Sprinkle with black pepper. Bake in preheated 450 degree oven for 30 minutes.
