Panama Pork Stew

Introduction

I like this dish in the slow cooker but you can do it on top of the stove I like this dish in the slow cooker but you can do it on top of the stove
Number of Servings: 6

Ingredients

    2.5lbs lean pork stew meat cut into 2i" pieces
    2 sm. sweet potatoes peeled
    1 cup sweet corn frozen
    1 cup green beans frozen
    1 cup chopped onions
    1 can(15oz) petite diced tomatoes (unsalted)
    1tbsp ground cumin(corriander)
    1tbsp course black pepper
    2tbsp ground chili powder
    salt (optional)

Directions

I like this dish done in the slow cooker it cooks & simmers all day while I'm at work & its great anytime of the year. To use it in the slow cooker peel & cut sweet potatoes into 2" cubes add to slow cooker, mix in sweet corn, green beans & onion. Place lean pork stew meat on top of your veggies. Than in a sm. mixing bowl add tomatoes, cumin black pepper, chili powder mix together, pour over top of meat set slow cooker on low for 7 to 9 hours,,,makes 6-1 cup servings...enjoy...
