Stuffed Cabbage Leaves

Introduction

This is a slimmed down version of a classic using ground turkey. This is a slimmed down version of a classic using ground turkey.
Number of Servings: 4

Ingredients

    12 outer leaves from cabbage
    1/2 C chopped cabbage
    1 lb lean ground turkey
    1/4 C finely chopped onion
    1/4 raisins or dried tart cherries
    2 Tbs dry bread crumbs
    1 C spaghetti sauce
    1/4 tsp ground cinnamon

Tips

Try using different dried fruit to your own taste. I love this with the tart dried cherries.


Directions

Remove 12 outer leaves from a cabbage. Remove tough center veins. Cook cabbage leaves in batches in boiling water for 3 minutes to soften. Drain. Finely chop 1/2 C cabbage.

Spay a large non stick skillet with cooking spray and cook ground turkey, onion, the 1/2 C chopped cabbage until meat is no longer pink and onion is tender.

Stir in raisins, bread crumbs and 1/4 C of the spaghetti sauce.

Spoon in a scant 1/4 C of the meat mixture onto each cabbage leaf, fold in sides and roll up leaf forming a bundle. Arrange rolls in a 2 quart rectangular baking dish.

Stir together the remaining spaghetti sauce and cinnamon. Pour over cabbage rolls.

Bake covered in a 350 degree oven for 25 minutes, or until heated through.

Serving Size: makes twelve stuffed cabbage packets
