Broccoli & Cheese Fritatta

Ingredients

    1 Cup Liquid Egg Substitute
    1 Tbsp Olive Oil
    1/4 Cup Onion
    1 Cup Frozen Broccoli
    2 Ozs Low Fat Cheddar Cheese, shredded
    1/8 tsp Salt
    1/4 tsp Pepper
    1 Tbsp Parsley

Directions

Preheat oven to 350.

Saute onion & broccoli in oven-safe pan with olive oil, salt, pepper and parsley. Cook until onion is translucent & broccoli still slightly crisp.

Cover pan & place in pre-heated oven for an additional 10 minutes or until eggs are firm.
