Broccoli and Cheddar Soup

Number of Servings: 20

Ingredients

    Broccoli, 2 bunches
    Chicken Broth, 1 can
    Mild Cheddar Cheese, 2 packs
    Velveeta Cheese, 1/2 log
    Milk, nonfat 1 cucp
    Flour, 1/2 cup
    Onion, 1 diced
    Garlic, 2 cloves
    Butter (enough to saute onion and garlic)

Directions

saute onion and garlic with butter. Add flour, mix. Stir in milk and broth. Melt on LOW heat (do NOT boil) the cheeses. Cook broccoli while cheeses are beginning to melt by steaming in microwave or stovetop. Add to melted cheese soup mixture.
