Chicken Corn Chowder

Ingredients

    2 Tbsp. I Can't Believe It's Not Butter Light
    1/4 cup raw onion, chopped
    2 Tbsp. white flour
    14.5 oz. can low sodium chicken broth
    15 oz. oz. can Yellow Sweet Corn, drained
    1 cup raw potato, diced
    13 oz. can premium chunk chicken, drained and shredded
    salt, pepper, thyme
    2 cups Almond milk original, unsweetened

Directions

In a 2 quart sauce pan, saute onion in the butter until tender. Add flour and stir until smooth. Slowly stir in chicken broth and simmer until slightly thickened. Add the corn, potato, and turkey. Season to taste with salt, peeper and thyme. Stir in the almond milk. Bring to a boil and simmer for about 20 minutes.

Serving Size: makes about 6 - 1 cup servings
